WOCSA is proud to use the AIS, Associazione Italiana Sommelier, curriculum. The curriculum includes the AIS renowned food and wine pairing method.

Members will learn:

  • The fundamentals of oenology
  • Wine service and wine tasting techniques.
  • Viticulture areas, native and international grape varieties and types of wine from around the world.
  • Mutually enhancing food and wine pairing using the AIS technical pairing methodology.


AIS, Associazione Italiana Sommelier, joined with WSA, Worldwide Sommelier Association, is the most prestigious sommelier association; it has more than 70 years experience and thousands of members throughout Italy and all over the world.
